Strawberry Lemon Poppy Seed Cream Cheese Cookies

This is actually my first post!! I've had this set up for some time now but hesitate everytime I start to type, I get so far and hit delete. Hoping to see this one through and hit publish.
I have become a Pinterest addict. Move over cookbooks, foodtv and DIY channel this is my new go to for everything. I have found so many new, interesting, inspiring fun blogs that I had to start my own.
This blog is to share the recipes and other DIY projects from the ideas I found on pinterest but have changed & made better.

Here is the recipe for my version of the White Chocolate Raspberry Cheesecake Cookies

                                The dough is amazing; almost didn't make to the cookie stage!
                                BTW get a silpat for baking best purchase you will ever make.

The recipe:


2 (7-ounce) bags  Martha White muffin mix, 1 lemon poppy seed; 1 strawberry

4 ounces cream cheese, softened

1/2 cup (1 stick) butter, softened

1/2 cup brown sugar, firmly packed

2 eggs

1/4 tsp. lemon zest

1/2 tsp. lemon juice


Preheat oven 350.

1 cup white chocolate chips ( I used Wilton chips and chopped with a knife which gave a great texture in the cookies as some just melted into the cookie batter when baked.

In the bowl of an electric mixer fitted with the paddle attachment, beat together the cream cheese, butter, lemon juice, zest, and brown sugar, until smooth Add the eggs one at a time, beating well after each addition.

Add the muffin mix, beat until blended. Stir in the white chocolate chips and place in the refrigerator to chill for at least 2 hours.

                                             
                 So yummy, chunks of white chocolate & strawberries. Cookies are soft and chewy.
