This is my recipe for German Chocolate Cupcakes, created with what I had in the pantry for a Family Golf Outing.
Ingredients:
1 (18.25 ounce) box chocolate cake mix
1 cup all-purpose flour
1 cup granulated white sugar
3/4 teaspoon salt
1 1/3 cups water
2 Tablespoons vegetable or canola oil
1 teaspoon coconut extract
1 cup sour cream
4 large eggs
1 cup all-purpose flour

Directions:
1. Preheat oven to 325°F. Place cupcake liners in cupcake pans (makes about 36).
2. In a large bowl, whisk together cake mix, flour, sugar and salt. Add remaining ingredients and beat with hand mixer for 2 minutes, or until well blended.
3. Use ice cream scoop to fill prepared cupcake tins- fill about 2/3 full. Bake about 15-18 minutes depends on your oven, or until toothpick inserted in center comes out clean. Mine took 16 minutes.

Filling Recipe:
2 oz. cream cheese
2 T whipping cream
Store bought container German Chocolate Icing
Whip cream
Add cream cheese & whip together
Add icing, beat together
Poke holes in center of cupcakes when cool.
Add filling.
Ganache Icing Recipe:
Ingredients:
2 cups heavy cream
2 cups dark chocolate
In a microwave safe bowl heat cream to a boil, ( watch carefully will boil over in a second!)
Remove add chocolate; stir until all melted and velvety smooth.
Ok here is what I did and it started as a mistake but...turned into the best mistake ever!
I dipped the top of the cupcake in the ganache, refrigerated overnight. Placed the rest of the ganache in the fridge overnight as well.
The next day I beat the ganache to a thick icing consistency and iced. Double icing!!!
These were the hit of the golf outing!
