Salmon Over Creamy Whole Wheat Pasta


I am all about quick, easy, find in my pantry ingredients to make a delicious meal. A few months ago just before our spring break trip to Seaside Florida we decided to change the way we eat. My first reason, to stay healthy, second to drop a few lbs and look spectacular on the beach...well as good as two fifty year olds can next to our sixteen year old daughter and their friends!
One thing I decided to do was make a set of cute small six inch dinner plates, bowls and glassware, (check my etsy site) to help us cut down on portion size and our food looks really appealing.
We are not following any strict diet plan but a combo of The Hampton Diet, The Mediterranean Diet, The South Beach Diet and our own idea of the smart way to eat. So basically we cut out the whites...white bread, white pasta, white rice, white potatoes and incorporated all whole wheat. The first few days are the hardest...would have done anything for a piece of bread!
This recipe was so easy & very tasty.

Ingredients:
salmon fillets ( 4 fillets)
whole wheat pasta (4 servings)
green beens ( love the costco frozen brand of veggies)

Start the grill ( 400 degrees)
Boil water for pasta
Heat the frozen beans

Sauce:
1 garlic clove minced
1 scallion white part sliced very thin
1 tsp olive oil
Saute the above in a skillet until fragrant about 2 minutes on medium heat.

Add:
1 Tbls. freshly grated ginger root ( I keep mine in the freezer; stays fresh & easy to grate)
1 Tbls. Lemon grass (gourmet garden brand fresh veggie section grocery)
Saute 1 min.

Add:
2 Tbls. white wine; cook 1 min
1/4 cup of chicken or veggie broth

salt & pepper to taste

slowly add:
1/2 cup fat free half &half ( love this stuff)
heat through...don't boil.

Add:
Cooked pasta mix thoroughly.

Grill fillets on foil drizzle with olive oil, salt & pepper about 7-8 min or until done.

Place one serving of pasta sauce mixture on the plate, top with green beans, & salmon.

Plate your food so it looks beautiful and take your time when eating, savor every bite.
