Roasted Garden Tomatoes over Grilled Chicken

The Cherry & Grape tomatoes in my garden are ripening faster than we are eating them a bad/good problem to have. I am always looking to create a light, healthy, fast meal so tonight we had this delicious dinner which literally took less than 20 minutes to prepare and it was full of flavor. This would be great served with pasta, however, I gave up white pasta ..ugh, dinners like this could use a good linguine!



Recipe:

cherry & or grape tomatoes; enough to fill an 8x8 baking dish
olive oil ( about 2 Tbls.)
3 sliced green onions ( green part included)
2 cloves garlic minced
1 tsp. dried fennel

6 boneless skinless chicken breasts
1/4 cup pesto

Preheat oven to broil.

~Chicken:

In a plastic bag add chicken & pesto, shake to coat marinate about 20 minutes. Grill medium heat 4-5 minutes per side or until cooked and no longer pink inside. Place on a serving platter.

~Tomatoes:

Fill an 8x8 baking dish with tomatoes, drizzle with olive oil, add onion, garlic, & fennel. Stir to coat.
Broil about 6 inches down,  5-8 min until bubbling & starting to brown. Stir halfway through.

Pour tomatoes & juice over chicken. Serve.

I served green beans & fresh fruit with this dish.
